01 · Definition

What it is

In this line honey is a carrier, not a sweetener. The base is a wildflower honey; Nightcap uses a buckwheat honey with Holy Basil. It is raw and unfiltered, and infused below a temperature ceiling so the biology survives the process.

02 · Mechanism

How it works

Honey's carrier behaviour rests on three things: native enzymes (diastase, invertase, glucose oxidase), very low water activity that preserves what it holds, and a humectant matrix that binds botanicals — the anupana logic shared with the Chinese mi zhi tradition.

Keep it under 40°C and those enzymes stay active; take it hotter and honey becomes merely sweet.
